I take an unusual route when I travel from Dallas to Katy. This detour provides some good benefits: shorter mileage and travel time especially since it avoids construction (usually in Conroe). However, leaving the big Texas cities means access to BBQ and I end up missing a noteworthy spot in Huntsville: the Church of the Holy Smoke.
Woody’s in Centerville is usually my choice for a rest stop, but as I drove back to Dallas earlier today, I spotted the letters “BBQ” in big red font while taking the exit ramp off Highway 6 into Navasota. I immediately made a u-turn and these letters led me a complex with some new businesses, one of which was Mallett Brothers Barbecue.
Opened the door and got a whiff of smoke, which was instantly a good sign. Walked up to the counter and ordered some brisket, ribs, and sausage. They had two choices for sausage: regular and jalapeno with cheese, and the guys slicing the meat sold me on the spicy stuff. I asked about how long these guys have been in business, and it turns out they’ve been here for close to a year now.
Man I wish I’d seen them sooner.
Brisket had a good red smoke ring and dark crust. The meat was tender, but not quite as moist as I had hoped, and that would make sense considering I made my order about 45 minutes before they closed for the day.

The sausage had a nice grind with a little bit of spice kick, but hardly any smoke flavor.
The ribs were easily the star of the show here and the reason I’d come back for more. The meat was easily torn from the bone and had a sweet flavor without being too cloying. Each caramelized bite finished with lingering smoke. I asked the owner about what sets his ribs apart and that’s a secret he’s not willing to give away. Either way, this was impressive ‘cue and I plan on stopping by here on future trips.
